Soup is a versatile dish that is served at, during, and for a myriad of different purposes. Indulge in our homemade creamy asparagus soup which will definitely satisfy your growling tummy.
Makes: 6 servings
2 lbs asparagus (2 bunches) with tough ends snapped off
1 tbsp unsalted butter
1 chopped medium onion
6 cups reduced sodium chicken broth
2 tbsp low fat sour cream
Kosher salt and fresh pepper
Using a large pot, melt the butter over low heat.
Put the onions on the pot and sauté for about 2 minutes, until soft.
Cut the asparagus into half. Add the asparagus, chicken broth, and black pepper to the pot.
Cover the pot. Boil it and cook low for about 20 minutes, until the asparagus is tender.
Remove from heat. Add sour cream then purée until smooth using a hand-held blender. You may do it in two batches using a large blender.
