  1. Combine peanuts, water, peas, kale, curry paste, salt and pepper in a blender.

  2. Blend until smooth.

  3. Pour into a saucepan over medium high heat until it comes to a simmer and then turn heat to low and simmer one minute.

  4. Heat skillet over medium high heat.

  5. Drain noodles and saute in hot skillet without oil until moisture has evaporated and noodles become a traditional noodle consistency.

  6. Place a half cup of noodles in a bowl, pour soup over top.

  7. Top with tofu and spring onion.
