Makes: 4 dozen
1 1 lb bag cauliflower rice, frozen
1 large egg
2 tbsp heavy whipping cream
1 tbsp coconut flour
1 tbsp almond flour
1/2 cup cheddar cheese, shredded
1/3 cup parmesan cheese, shredded
1 clove minced garlic
1/2 tsp onion powder
Salt and pepper to taste
Thaw cauliflower rice and squeeze out excess water.
Mix all ingredients in a bowl until well combined.
Butter a mini muffin tin and fill each cup with 1 tbsp of mix.
Bake in a preheated 400 degree oven for 15 minutes.
Gently flip each tot and bake for an additional 15 minutes.
If you reuse a pan be sure to grease between uses.
Dip in low carb marinara sauce or ranch dressing!
