5 low carb cookie recipes

1. Low-Carb Peanut Butter Cookies

Makes 10 cookies

  • 1 egg

  • 1 c peanut butter

  • ½ c erythritol or low carb sweetener of choice

These easy cookies come together in a few minutes and are a great post workout treat. Preheat your oven to 350℉. Combine all ingredients, scoop a golf-ball size amount onto a cookie sheet, and flatten slightly with a fork (not necessary, but adds some decorative flair!). Bake for 10–15 minutes or until edges begin to darken. Let cool on wire rack and enjoy!

2) Low-Carb Chocolate Chip Cookies

Makes 24 Cookies

Preheat oven to 325℉ and line 2 cookie sheets with parchment paper or silicone baking mats, or grease them. In a large mixing bowl, cream butter with an electric hand beater or a stand mixer, then add granulated sweetener until well combined. Add egg, molasses (if using), and vanilla extract and mix until combined.

In a separate large mixing bowl, combine almond flour, coconut flour, baking powder, and sea salt. Stir until combined. Add the dry ingredients to the wet ingredients and mix in until combined. Fold in chocolate chips and pecans. Place tablespoonfuls across a cookie sheet 1½ inches apart. Bake for 12–15 minutes or until cookies are browned on the bottoms. Remove and until cookies firm up and set (about 25 minutes).

3) Cinnamon Butter Cookies

Makes 15 Cookies

Preheat oven to 300℉. Add all ingredients to a bowl and mix until well combined. Roll into balls and place onto greased cookie sheet. Bake for 5 minutes, press down with fork, and return to oven. Bake for another 15–20 minutes

4) Cream Cheese Cookies

Makes: 24 Cookies

Preheat the oven to 350 degrees℉. Line a large cookie sheet with parchment paper. Use a hand mixer or stand mixer to combine the butter, cream cheese, and erythritol until fluffy and light in color. Add vanilla extract, salt, and egg white. Add almond flour half a cup at a time. The dough will be dense and a little crumbly, but should hold its shape when pressed together. Roll about 1½ tablespoonfuls into balls and place them onto the prepared cookie sheet. Flatten with your palm. Bake for about 15 minutes until edges are lightly golden. Allow to cool completely in the pan before handling (cookies will harden as they cool).

5) Double Chocolate Cookies

Makes 18 Cookies

Preheat oven to 350°F. Line a rimmed cookie sheet with a silicone baking mat or parchment paper. In a large mixing bowl, combine the almond butter, erythritol, cocoa powder, peanut butter powder, eggs, butter, water, vanilla extract, and baking soda. Using an electric hand mixer, mix until all ingredients are well combined. It will be a very thick dough. Fold in the chocolate chips. Roll the cookie dough into 1½ inch to 2 inch balls. Place them on the prepared cookie sheet. Bake for 10–12 minutes. Remove from the oven and cool on a cooling rack.
