low carb : parmesan roasted brussel sprouts

Makes: 2 servings


  • 10 brussel sprouts

  • 1 large garlic clove, minced

  • 2 tbsp butter

  • generous dash of salt

  • pepper

  • 1/2 cup parmesan cheese, shredded


  1. In a medium sized sauce pan, melt butter over medium high heat.

  2. Add brussel sprouts, garlic, salt, and pepper. Stir until brussel sprouts are coated in butter and seasonings.

  3. Put lid on skillet and let cook covered until brussel sprouts get slightly charred on bottom, about 5 minutes.

  4. Stir and cover again, cooking another 5 minutes or until tender.

  5. Transfer to a 9x9 baking dish and cover with parmesan cheese.

  6. Broil on high until parmesan cheese is bubbly and golden. Serve warm.
