It is a rice cooker/slow cooker/pressure cooker all in one and is a game changer in the meal prep arena. Not only is it an economical way to cook as you only have to heat up a 5-8 qt appliance, but it is also a healthier way to prepare food as the nutrients are cooked back into the food under pressure. Now, lets discuss the most important component: flavor. Because seasonings and flavors are not cooked out in steam but rather contained within the pressure cooker, the flavors tend to be heightened when prepared in a pressure cooker, resulting in a more flavorful meal.

For those who have yet to invest in an Instant Pot, this recipe is easily adaptable to a stove top method and still the best butter chicken you've ever tasted. I guarantee it!

INSTANT POT

  1. Combine can of tomatoes and all the spices in an Instant Pot. Stir well.

  2. Top with Chicken. Cook at high pressure for 12 minutes, 14 minutes if the chicken is frozen.

  3. Let the pressure naturally release 12 minutes before removing the lid.

  4. Remove chicken and let sauce sit 10 minutes.

  5. Add butter and coconut milk.

  6. Using a hand immersion blender, blend the sauce until smooth.

  7. Cut the chicken into bite-size cubes and stir back into the sauce.

  8. Top with chopped cilantro and serve over cauliflower rice.

STOVE TOP

  1. Cut chicken into bite-size cubes.

  2. Heat 3 Tbsp olive oil over medium high heat in a large skillet and saute chicken until cooked through.

  3. Remove from pan and set aside.

  4. Combine 2 tsp coconut oil, garlic, ginger, and spices in skillet over medium heat and and stir until fragrant, about 3 minutes.

  5. Add can of tomatoes and bring to simmer.

  6. Add butter and coconut milk.

  7. Blend with a hand immersion blender until smooth.

  8. Add chicken to sauce and stir to combine.

  9. Cover and let simmer 1 minute.

  10. Serve over cauliflower rice.
