Makes: 10 cakes
5 oz fresh or canned crab meat
1/4 cup mayo
3 oz cream cheese, softened
1/4 cup sour cream
2 large eggs
1/2 tsp salt
1/4 tsp onion powder
3 Tbsp green onions, diced
1 tsp parsley, chopped
1/2 cup parmesan cheese, shredded
1/2 cup cheddar cheese, shredded
1/2 cup gouda cheese, shredded
1/4 cup crushed pork rind crumbs
1/4 parmesan cheese, shredded
Combine all ingredients in a medium bowl.
Pour mixture in 10 greased muffin tins (silicone cups work great!).
Sprinkle pork rind crumbs and parmesan cheese over crab cakes.
Bake in preheated oven at 350 degrees for 25 minutes.
Garnish with parsley sprig. Enjoy!
