low carb : chicken cordon bleu

Makes: 2 servings




  1. Preheat oven to 350 degrees.

  2. Cut a pocket in each chicken breast.

  3. Place a slice of swiss cheese and a slice of ham in the pocket of each chicken breast.

  4. Mix the mayonnaise and 1 tbsp dijon mustard, then spread evenly over the top of each chicken breast.

  5. Cover each chicken breast liberally with crushed pork rinds and a little salt and pepper.

  6. Place chicken in a greased pan and bake for 25 minutes, or until cooked through.

Cream sauce

  1. In a medium sized sauce pan over medium heat, melt butter.

  2. Add diced shallot to melted butter and saute until fragrant.

  3. Add cream, dijon, and thyme, bring to a boil then immediately turn to low.

  4. Add parmesan cheese and cook on low for 3 minutes, stirring constantly.

  5. Add salt and pepper to taste.

  6. Drizzle over chicken and enjoy!
