low carb : steak fajitas


Makes: 3 servings



INGREDIENTS

  • 1 small green bell pepper

  • 1 small red bell pepper

  • 2 jalapenos

  • 1 small onion

  • 4 tbsp olive oil

  • 1 lb skirt steak

  • 1 garlic clove, minced

  • 2 tbsp fajita seasoning

  • 1/2 cup cheddar cheese, shredded

  • 1/4 cup sour cream

  • 1/4 cup guacamole

  • 3 low carb tortillas


INSTRUCTIONS

  1. In a large skillet, heat olive oil over medium high heat.

  2. Cut bell peppers and onion in thin strips.

  3. Dice jalapenos and remove seeds and veins for a milder heat.

  4. Cut steak into thin strips.

  5. Add bell peppers, onion, jalapenos, and steak to the hot oil and saute until peppers and onion soften and steak is cooked to preference.

  6. Divide filling in half and place in two tortillas.

  7. Top with cheese, sour cream, and guacamole. Optional topping: pico de gallo.
