low carb : creamy cajun shrimp

Makes: 2 servings


  • 2 slices of bacon

  • 1 shallot, diced

  • 1 lb medium shrimp, peeled and de-veined

  • 1 tbsp Cajun seasoning

  • 1/3 cup heavy cream

  • 2 green onions, thinly sliced


  1. In a medium skillet over medium high heat, fry bacon. Remove bacon, crumble, and set aside.

  2. Add shallot to bacon grease and cook 3 minutes.

  3. Add shrimp and Cajun seasoning and stir to coat shrimp.

  4. Sear shrimp 2 minutes on each side, or until cooked.

  5. Add heavy cream and bacon crumbles and stir. Cook 3 minutes or until sauce thickens.

  6. Garnish with green onions.

  7. Chef tip: serve over a bowl of cheesy cauliflower mash!
