Makes: 2 servings
2 slices of bacon
1 shallot, diced
1 lb medium shrimp, peeled and de-veined
1 tbsp Cajun seasoning
1/3 cup heavy cream
2 green onions, thinly sliced
In a medium skillet over medium high heat, fry bacon. Remove bacon, crumble, and set aside.
Add shallot to bacon grease and cook 3 minutes.
Add shrimp and Cajun seasoning and stir to coat shrimp.
Sear shrimp 2 minutes on each side, or until cooked.
Add heavy cream and bacon crumbles and stir. Cook 3 minutes or until sauce thickens.
Garnish with green onions.
Chef tip: serve over a bowl of cheesy cauliflower mash!
