low carb : bacon-wrapped stuffed meatloaf


Makes: 7 servings



INGREDIENTS

  • 1 1/2 lbs ground beef

  • 1 cup crushed spicy pork rinds

  • 1 egg, lightly beaten

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 tbsp parsley

  • 2 tsp oregano

  • 3/4 cup grated parmesan cheese

  • 1/4 cup onion,

  • finely diced

  • 1 tsp granulated garlic

  • 1 cup sharp cheddar cheese, shredded

  • 7 slices bacon


INSTRUCTIONS

  1. Combine all ingredients except cheddar cheese. Mix only until well combined - don't over-mix!

  2. Flatten meat into a rectangle and spread cheese over the top.

  3. Roll up and gently place bacon strips around the meatloaf until covered.

  4. Place into a greased bread pan and bake in a preheated 350 degree oven for 1 hour.

  5. Allow to sit 10 minutes before cutting into it.
