keto: transformation tuesday - elizabeth


After avoiding the scale for over a year, I decided to weigh myself on January 3rd, 2017. I was horrified by what I saw on the scale: 261.6 lbs. That is the heaviest I had ever weighed, and was 30 pounds heavier than the last time I weighed myself. I looked myself in the mirror in disgust and decided it was time to finally make a change.

I tried Weight Watchers for the first month, and although I lost weight, something was missing: I had no energy and was constantly hungry. I knew there had to be a better way. Someone I followed on Instagram always posted this food that looked amazing, and she had such success with losing weight by following a Ketogenic diet. I had never heard of this diet before, so I did a lot of research and determined Keto was something I could do and wanted to try. On February 27th, 2017 I started following a Ketogenic diet. Within the first few weeks I noticed that I had improved energy and decreased hunger, and I was already losing weight!

I eat delicious food such as cheese, bacon, mashed cauliflower, bacon-wrapped stuffed jalapenos, chicken alfredo (with zucchini noodles), chuck roast, cheeseburgers (without the bun), the list goes on… eating a low carb, high fat diet really does keep me full and satisfied. If I crave sweets or bread, I simply make a Keto-friendly version. I’ve made Keto pizzas, strombolis, bagels, cookies, chocolate truffles.. there is a Keto alternative to practically everything and it’s always delicious (and sugar-free)!

Not only is the food amazing, but so are the results. I’ve lost 62 pounds since following a Ketogenic diet with very little to no exercise. I have gained so much confidence, energy, and happiness. When I was living off carbs, I always felt so drained - to the point where just a trip to the store felt grueling. Now, I make activities a part of my daily life and I have the energy to do the things I never did. I was miserable before I found Keto, and now I am truly the happiest I have ever been.
