The niKETO loaded cauliflower bake is the perfect side dish to a meaty main course or as a stand alone warm dish perfect for chilly nights. With plenty of bacon, cheese, and butter it's a nice meal rich in good fats. The cauliflower is low-carb and not nearly as starchy as the potatoes this dish will remind about when the texture and flaver hit your tongue in perfect balance.
INGREDIENTS
2 1/2 cups cauliflower florets
2 tbsp butter
1/2 cup sour cream
1/2 cup cream cheese
3/4 cup shredded cheddar cheese
1/4 cup green onions, finely chopped
6 slices cooked bacon, crumbled
1/4 tsp seasoning salt
1/4 tsp ground black pepper
INSTRUCTIONS
Boil cauliflower until tender. Drain, place cauliflower in a dish towel and wring out excess water.
Chop up cauliflower into small pieces and then blend until smooth.
Using a hand mixer, mix in butter, sour cream, cream cheese, and salt and pepper.
Using a large spoon, mix in cheddar cheese, bacon, and green onions, reserving a little of each to add on top.
Place in an ovens-safe baking dish and top with reserved bacon and cheese.
Bake in a 350 degree preheated over for 20 minutes.
Remove and top with reserved green onion.
