low carb : loaded cauliflower bake

The niKETO loaded cauliflower bake is the perfect side dish to a meaty main course or as a stand alone warm dish perfect for chilly nights. With plenty of bacon, cheese, and butter it's a nice meal rich in good fats. The cauliflower is low-carb and not nearly as starchy as the potatoes this dish will remind about when the texture and flaver hit your tongue in perfect balance.

INGREDIENTS

  • 2 1/2 cups cauliflower florets

  • 2 tbsp butter

  • 1/2 cup sour cream

  • 1/2 cup cream cheese

  • 3/4 cup shredded cheddar cheese

  • 1/4 cup green onions, finely chopped

  • 6 slices cooked bacon, crumbled

  • 1/4 tsp seasoning salt

  • 1/4 tsp ground black pepper

INSTRUCTIONS

  1. Boil cauliflower until tender. Drain, place cauliflower in a dish towel and wring out excess water.

  2. Chop up cauliflower into small pieces and then blend until smooth.

  3. Using a hand mixer, mix in butter, sour cream, cream cheese, and salt and pepper.

  4. Using a large spoon, mix in cheddar cheese, bacon, and green onions, reserving a little of each to add on top.

  5. Place in an ovens-safe baking dish and top with reserved bacon and cheese.

  6. Bake in a 350 degree preheated over for 20 minutes.

  7. Remove and top with reserved green onion.
