low carb : ultra fudgy pecan brownies


Makes: 16 servings

INGREDIENTS

  • 1/2 cup butter

  • 6 oz. 80% dark chocolate

  • 7 tbsp almond flour

  • 3/4 cup Swerve

  • 3 large eggs, room temperature

  • 1/2 tsp vanilla

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 3 tbsp pecans, chopped

INSTRUCTIONS

  1. Chop the chocolate in small chunks, chop the butter in small chunks, and add together in a glass bowl.

  2. Microwave in 10 second increments, stirring every 10 seconds until completely melted and smooth.

  3. Allow to cool 5 minutes, then add Swerve, vanilla, and eggs.

  4. In a separate bowl, combine flour, baking powder, and salt.

  5. Add flour mixture to chocolate mixture and gently stir just until flour is completely incorporated.

  6. Pour into a greased 9x9 pan and sprinkle chopped pecans over the top.

  7. Bake in a 350 degree oven for 20-25 minutes. Do not over-bake!
