Pumpkin Spice Fat Bomb

  • 1/2 cup pumpkin puree

  • 2 tsp pumpkin pie spice

  • 1/2 cup coconut oil

  • Avocado oil cooking spray

  • 4 oz softened cream cheese

  • 1/2 cup pecans

  • 1/4 tsp cinnamon

  • 1/4 cup golden monk fruit sweetener


  1. Spray the avocado oil cooking spray on a small pan over medium heat. Toast pecans until aromatic. Remove from heat and set aside to cool.

  2. Melt and combine the coconut oil and cream cheese in a medium-sized pot over medium-low heat.

  3. Put the coconut oil and cream cheese mixture into a medium-sized bowl then add pumpkin puree, monk fruit sweetener, and pumpkin pie spice. Mix them well using an electric hand mixer.

  4. Scoop mixture into silicone mold. Top it with roasted pecans and cinnamon.

  5. Freeze the silicone mold in the freezer for about 4 hours.

  6. After freezing, remove the fat bombs from the silicone mold.
