Makes: 8 servings
2 cups pecans, whole or halves
1 egg white
1/2 tsp vanilla extract
1/2 cup Sukrin Gold
3/4 tbsp cinnamon
1/4 tsp nutmeg
pinch of salt
Beat egg white in a bowl until doubled in size and peaks form. Gently fold in vanilla.
In a separate bowl, combine Sukrin Gold, cinnamon, nutmeg, and salt.
Add pecans to egg whites and stir until well coated.
Dump pecans into spice mixture and stir until well coated.
Preheat oven to 250 degrees. Line a baking sheet with parchment paper and spread a thin layer of pecans over it.
Bake for 45 minutes, stirring halfway through baking time.
