Makes: 4 servings
2 tbsp butter
2 stalks celery, diced
1/4 onion, diced
2 6.5oz can of clams, clams chopped and juice retained
1 cup coconut milk
1 cup chicken broth
1/2 cup heavy cream
4 oz cream cheese
2 slices fried bacon
1/2 tsp granulated garlic
1/2 tsp salt
1/4 tsp pepper
In a heavy duty sauce pan over medium high heat, melt butter.
Add celery and onion to melted butter and saute 5 minutes.
Add clams with their juice, coconut milk, chicken broth, cream cheese, garlic, salt and pepper and bring to a boil.
Stir in cream and bacon and cook just until heated.
