Makes: 4 servings
1/4 small yellow onion, finely diced
2 tbsp butter
2 garlic cloves, minced
2 cups chicken broth
1 tsp salt
1/2 tsp pepper
1 cup broccoli florets, chopped
2 oz cream cheese
1/4 cup heavy cream
1 cup sharp cheddar cheese, shredded
1/2 tsp xanthan gum
In a large pot over medium high heat, saute onion and garlic in butter until onions are translucent.
Add salt, pepper, broth, and broccoli to pot and simmer until broccoli is softened, about 7 minutes.
Add cream cheese and heavy cream and bring to a boil. Immediately remove from heat and stir in cheese and xanthan gum.
Let sit until thickened to preference. Enjoy!
