fat bomb : vegan + low carb

Makes: 12 bombs

These energy balls are also known as “fat bombs” because they pack in healthy fats with every bite! By using ingredients such as antioxidant-rich cacao nibs, raw dried coconut and all the healthy fats within it, and soft pitted dates, this recipe is sweetened without the use of refined sugars. Nuts and seeds are added in to the mix, providing omega-3 fatty acids, vitamin E, protein, fiber and lasting energy for your morning workout, midday snack or maybe a guilt-free dessert!


  • 1 cup organic raw nuts (we used cashews)

  • 2/3 cup soft pitted dates

  • ¼ cup raw dried coconut shreds

  • 2 tablespoons nut butter of choice (we like almond butter best!)

  • ½ teaspoon cinnamon

  • ½ teaspoon cardamom

  • pinch Himalayan pink salt

  • ½ cup raw cacao nibs

  • ¼ cup organic hemp seeds aka hemp hearts


  1. Place nuts in food processer and process until ground.

  2. Add dates, coconut, almond butter, cinnamon, cardamom, and salt and process until smooth, transfer to bowl.

  3. Mix in cacao nibs using hands, and then form into 12 small balls.

  4. Place hemp seeds in a bowl and roll each ball in the hemp seeds until evenly coated.

  5. Store in the refrigerator (will keep for one week).
