low carb : cheesy cauliflower mash

Makes: 4 cups


  • 2 head of cauliflower

  • 5 tbsp heavy cream

  • 3 tbsp butter

  • 3 oz grated sharp cheddar

  • salt and pepper to taste


  1. Rice two heads of cauliflower in a Ninja (or similar). A regular blender won't work here, it will only mush the bottom.

  2. Add cauliflower and 1/2 c water to a pan. Steam with the lid on until the cauliflower is cooked and the water has evaporated.

  3. Return cauliflower to Ninja.

  4. Add butter, heavy cream, cheddar, salt and pepper to Ninja.

  5. Blend until smooth.
