low carb : garlicky parmesan asparagus

Makes: 5 Servings


  • 3 garlic cloves

  • salt, to taste

  • 1 bunch asparagus spears, approximately 30

  • 3 tbsp parmesan, divided

  • 1 tbsp olive oil


  1. Preheat oven to 400 degrees.

  2. Make a garlic paste with the garlic cloves (minced), 1 tbsp parmesan, and salt.

  3. Trim the woody bottoms off the asparagus.

  4. Massage the asparagus with the paste.

  5. Add parmesan and olive oil.

  6. Place in oven* and roast until slightly charred.

*You can also use a NuWave table top infrared oven or the grill function of a toaster oven. You want the asparagus to retain a little crunch while getting a nice char on the outside.
