INGREDIENTS
2 medium cucumbers
1/2 red bell pepper, finely chopped
1/2 red onion, finely chopped
1 clove garlic, crushed
1/2 tbsp apple cider vinegar
1/2 tbsp lime juice
1 tbsp chopped fresh cilantro
2 tbsp extra virgin olive oil
¼ tsp salt
freshly ground black pepper to taste
Optional: 1 cup full-fat yogurt or sour cream
INSTRUCTIONS
Grate the cucumber into a bowl.
Add all the remaining ingredients, including the yogurt or sour cream, if using, and mix until well combined.
