low carb : asian cucumber salsa


Makes: 4 servings

INGREDIENTS

  • 2 medium cucumbers

  • 1/2 red bell pepper, finely chopped

  • 1/2 red onion, finely chopped

  • 1 clove garlic, crushed

  • 1/2 tbsp apple cider vinegar

  • 1/2 tbsp lime juice

  • 1 tbsp chopped fresh cilantro

  • 2 tbsp extra virgin olive oil

  • ¼ tsp salt

  • freshly ground black pepper to taste

Optional: 1 cup full-fat yogurt or sour cream

INSTRUCTIONS

  1. Grate the cucumber into a bowl.

  2. Add all the remaining ingredients, including the yogurt or sour cream, if using, and mix until well combined.
