low carb : peanut butter cookies


Makes: 5 servings

INGREDIENTS

  • 1 cup natural peanut butter (no sugar added)

  • 1 egg

  • 1 tbsp vanilla

  • 1/2 cup Swerve

  • 1/4 tsp salt

INSTRUCTIONS

  1. Combine all ingredients and mix well

  2. Roll 1 tbsp of mix into a ball and place on greased baking sheet.

  3. Using a fork, press balls into a flat cookie shape, rotate fork and press the opposite direction to create a design on top.

  4. Sprinkle tops with a little Swerve.

  5. Bake in 350 degree preheated oven for 12 minutes.

  6. Allow to cool 3 minutes then place on cooling rack.
